
Tilted Barn started life back in June as a Pils, Vienna, Rye and Honey based beer. The resulting beer was great and 11 gallons disappeared in the first few hours of the annual Pig Roast at the farm. Like most things, there is always room for improvement. My main objective was to firm up the grainy malt backbone on the beer. To do so, I dropped the Vienna, lowered the Pilsner malt % and added Oats & Wheat. The resulting beer is still dry but has a bit more fullness. I also wanted more hop contribution so the late Cascade/Centennial additions were bumped up and a flameout addition was added. The yeast was a 3 gen from the original slurry and has certainly mutated a bit, I do like it but want to see this beer from the original White Labs Blend (WLP568).
The un-named American Brown Ale has a pretty serious malt backbone consisting of Vienna as the base. The 2-minute coffee steep proved to be a good choice. The aroma is there, albeit subtle, but you do notice it quickly. This was my first go with Pale Chocolate Malt and it proved to be a good choice. There's a great nuttiness to the beer without being too dominant. I would like to try it again with Pale Malt as the base and see where it takes me. The late Crystal hop addition is pretty much muted with the other bold flavors here so it will be increased on the next version, possibly swapped for a grassier hop.
